01 / ABOUT THE PLACE

About this place

At Bishiya, the thick pork-bone soy sauce broth clings to the noodles. Reviewers describe the broth, simmered for a full day with pork bones, chicken bones and other ingredients, as mellow and rich, yet not too heavy on the finish. Some say it goes particularly well with white rice, making rice a good choice if you want to enjoy every last bit of broth.

The chashu ramen comes topped with a total of 4 slices of pork shoulder loin, slowly braised until tender, and pork leg cooked at a low temperature. It is presented on the menu as a hearty option; one diner who ordered the regular size also reported that the generous serving of tender chashu made for a satisfying meal.

For the dipping noodles, the restaurant simmers its broth further with dried sardines, mackerel flakes and other ingredients, creating a pork-bone and seafood broth. Choose noodles in a portion of 200g or 300g. The dish also comes with rice scented with yuzu to finish, so the meal continues after the noodles are gone. One diner mentioned choosing 300g and enjoying the rice at the end.

If fried chicken is calling, consider a set that pairs ramen with 3 pieces of fried chicken and rice. There is counter seating for solo diners. Payment is cash only.
